How to Make Greek Coffee with Kokkino's

  1. For every demi-tasse cup of coffee desired, put 1 tablespoon of Kokkino's Greek Coffee into the Briki Pot. If you'd like to add sugar or spices, now is the time.
  2. Pour into the Briki, room temperature or slightly cool water. We recommend using the cup you intend to serve the coffee in, as a measuring cup. Use as many cups of water as spoonfuls of coffee. Leave enough room in the Briki so that the coffee has room to boil upward.
  3. Stir the mixture to prevent clumps and place the Briki over a heat source on medium-high heat. You can use a standard stove. Optimal brew time should be 2.5 minutes. Adjust heat accordingly, but do not overthink, and do not stir the coffee during brewing.
  4. Reduce heat in the middle of the brew time. Approximately 1 minute in.
  5. Wait until the foam rises towards the rim and remove the pot just before it gets to the top. Once the foam settles, put it back on the heat and allow it to rise once more and remove before the coffee gets to the rim for a second time.
  6. Pour the coffee into your serving cup, holding the serving cup at an angle to retain your foam.
  7. Serve with a glass of water and a small sweet. Let the coffee settle for a minute or so before drinking, and do not drink the settled grounds at the end.
